Buckwheat PancakesWhen my son was just a kid, under 2 I think, he loved P-cakes (his name) Now that meant buckwheat pancakes not the regular. When on vacation at that time our relatives and us went out to a pancake house to treat the kids, (and us) The waitress was very nice and ask him what he wanted, he responded with P- cakes. Naturally she brought him the house special which he adamantly refused, just kept saying P-cakes, till I noticed what was going on and explained what he thought was pancakes. They all laughed since most kids did not like buckwheat. For Buckwheat P-cakes worth a kids liking: mix 2 cups buckwheat, 1 teaspoon soda, 1/3 cup oil, 2 eggs, add milk till a little runny for pancake batter.
